My itunes icon has disappeared from my dock on my MAC.

It's fairly easy to accidentally pull an icon out, but you can just as easily put any icon you like back into the dock. In the Finder, go to Applications. There, find iTunes, and drag its icon into the Dock.

In addition, once an application is open in the Dock you can right click on it and say "Keep in Dock" to add it.
