This seems to be a bug in the Music app. Here is how I solved it for my iPhone 3GS:

  1. Connect the device using iTunes, and UN-check everything in the "Music" section.
  2. Sync the device with iTunes. This will remove all music from the device.
  3. RE-check any (or all) items you want to sync in the "Music" section.
  4. Sync the device with iTunes again.
  5. Be patient. This will probably take a long time.
  6. Sync the device with iTunes again, just to be sure.

Once finished, your music should be restored, and will play properly.

Good Luck!

After updating my iPhone to iOS5, AAC files played fine, but any MPEGs that were over 128 kbps would not play. Because the syncing process converts MPEGs over 128 kbps to Mac's standard AACs, it fixes the problem – but only if you check the button to Convert higher bit rate songs to 128 kbps AAC. Lastly, it seems that if you manually add songs via drag/drop, high-quality MPEGs are not converted, and they will continue to not play.

You don't have to go there. The only thing you need to uncheck is the synking of your music in the music heading and say you want NO music on the iphone. That will clear it of music then synk it again by clicking the songs you want and it will work. It did for me anyway with my iphone 4 and macbookpro.

Hope this helps all of you :-)

This fix worked for me. Thanks, shellhornj! I just unchecked the items that were synced in the "Music" section of my iPhone when it's connected to iTunes. I then synced it with no music selected. Then as was suggested, went back in and checked the music I wanted back on there (mostly just playlists I've made specifically to put on the iPhone) and synced it again. This did take a little while (700+ songs being converted down to 128kbps,) but now all the music plays perfectly. I appreciate the quick fix!
