When holding the home button and then simultaneously clicking the quick on/off button to take a screen shot, the phone simply performs the 'screen off' function. Is there a different way to take a screenshot on my phone?

I just moved to the 4S with iOS5 and discovered the same change. With iOS4 it was easy to take a screenshot. I hope the feature is still in iOS 5 somewhere.
that's interesting. I just tried it on mine and it took a screen shot in the same way my 4, 3GS and iPads do.
not to be snarky, but are you sure you're getting the buttons pressed? after all the home button is brand new and maybe it needs a little broken in to be as snazzy as it was on your previous phone?
Other than that, my 4S does it, so if it's not a problem with the buttons, then you've got something else going on there.
Hold the sleep button down first, then push the home button. Still works as it should on 4S.
That's weird that it doesn't work for you, it works fine on my 4S.
Had same problem... Press and hold Sleep buttom first then just press and release home button.
on my iP4 with 5 you only have to press home button very very briefly
Yes, the trick is holding down the sleep button first. This had to change to facilitate the shortcut to Siri on the 4S.
Not working for me. Pressing the sleep button first and then the home button (or vice versa) just puts it into sleep mode. I have to disable Siri in order to take a screenshot.
You have to push the buttons like this on the 4S to get a screen capture:
The screen capture ends up in the Camera Roll (where you now can crop!)
Any other variation of button pushing on my 4S would start Siri or turn of the screen backlight.

Pressing (and holding) the sleep button first and then pressing the home button works. Alternatively, you can hold the home button for a very short time (otherwise siri starts) and the press the sleep button.
Glad I found this thread. Holding down the sleep button and quickly pushing the home button did the trick.
The iPhone Tips and Tricks page does not make this clear.
