I was able to use Excel 2011 for several languages including Korean and Chinese when I was on Snow Leopard.
Now, after upgrading to Lion, I can't figure out how to get that functionality.
I have used the Microsoft Language Register to get the Japanese character set to appear correctly. What do I need to do to get the other character sets to appear?

Are you not able to create Chinsee and Korean text by using the input methods provided in system preferences/language & text/input sources? If not, what happens when you type using them?
I'm copying data out of a multi language database and pasting into excel. On Snow Leopard I was able to paste Korean and Chinese characters into excel. Now, I get a box with a small in the place of Chinese/Korean characters.
I'm sure this is a matter of just not having a setting set properly, but I can't find it and I can't find anything online about it.
Try copy/pasting into TextEdit, and if that works, then from there into excel.
The symbols you see seem to indicate there is no font available, which cannot be true if you are seeing stuff elsewhere.

I see the fonts in Text Edit but they don't paste into excel so clearly, the font set is not being recognized since the upgrade to lion (I saw the Korean with Snow Leopard). I will investigate further at the link you sent. Thanks.
A new learning. The Korean characters are in the Formula bar, but not showing in the Excel cells. Then I formatted the cells->Font (Cells containing the Korean) to one of the Fonts that is Korean. Then, the Korean appears. This is fine when I'm working with a single language, but it is not useful when I have multiple language strings in a field or in a file. So, I'm still not fully back to my original functionality with Snow Leopard. Probably, user error in setup so I will keep working at it.
The solution is to choose Arial Unicode MS Font for any fields that need to present Korean or Traditional Chinese Characters.
