You need to connect your surround system with a toslink digital audio optical cable. One end plugs into the headphone jack of your Mac, via a 3.5mm adapter, and the other to the optical input on your system/receiver. You will get surround with this connection type (I've already tested with my own system).

Thanks for the response Lance. Things still aren't working well for me, my receiver is still being shown as a stereo LCD TV for some reason. I'll keep fooling around with it.
How is your surround sound system connected to your Mac? Did you make sure to select the 720p or 1080p HD option when viewing the YouTube video?
My Mac is connected via Thunderbolt to hdmi to reciever and yes I'm watching the YouTube video in 720p.
Like I said, you can get surround sound from the optical audio output using a toslink cable, even though the Audio/MIDI setup only shows 2 channels.
Using a Toslink Digital Optical Cable with a 3.5mm adapter that can plug into the iMac's headphone jack will work (depending on what year your iMac is). I use this to listen to music in iTunes.

But i could not see any other device than built-in when I check preferences>sound>output.

You have to choose 44.100hz and 2 channel 16bit audio in Audio Midi setup to get full srrround support.
I have exactly the same issue. Although I already have the optical cable and audio jack adapter by problem is as described previously.
Sounds like a winner, but I am using a Sony HT-NT5 sound bar and sub with wireless surround speakers - only hdmi connections are available. I have movies in iTunes playing 5.1, but music is a no go.
