How can I save a photo assigned to a contact? The photo is not in my camera roll/photo stream.

Easy!
Go to your contacts with the photo you want to save
Click Edit
Click the photo (touch it)
Choose "copy"
Open you email (gmail) on the iPhone
Create a new message
"Paste" the photo
Send yourself the email
When you got the email touch the photo and save it to your photos
Done!!

I don't think it's possible in the current iteration of iOS.
Oops. I misread it. That's right. Not possible. 😝
Does not work for me. Clicking on the photo does not provide a "copy" option; the only options are Take Photo, Choose Photo, Edit Photo, and Delete Photo.

It does work - hold your finger over the empty "add photo" box for a second then the "paste" option appears.
If you just touch it quickly you'll only see the options choose image or take photo.
And make sure you're using the latest ios
Contacts > select the name of the contact > Edit > add photo. You can either Take Photo and use your camera to capture a photo if the person is right next to you, or select from Choose Photo from Camera Roll. 🙂
Thank you for clarifying! You are correct. Holding my finger on an existing photo assigned to a contact does pop up a "copy" option, and from there I can past the photo (thumbnail only, unfortunately) into an e-mail.
