In the iPad Settings, where you have your list of keyboards, you need to tap on the keyboard name (Spanish or Portuguese Brazil) and then a list will come up with two parts, Software and Hardware. In the Hardware part you need to select US International PC.
This is the standard way to match the OS with a bluetooth keyboard and should not depend on the make of keyboard at all.

It really has nothing to do with Zagg. Keyboard layouts are set in the OS and you just need to understand how Mac keyboard layouts work in order to use them properly.
If you set the Hardware keyboard to US, the you should get the accents via standard Mac deadkeys:
Option/alt-n = tilde
Option/alt-` = grave
Option/alt-e = acute
Option/alt-u = diaeresis/umlaut
Option/alt-i = circumflex
(Option/alt-c = c-cedilla)

Thanks for the detail in the answer. We're able to use it, finally.
I still take issue with Zagg, and the defense that "this has nothing to do with Zagg, you just have to understand the Mac OS...."
1) The iPad came with an instruction sheet literally about 3" square, and it was mostly white space.
2) I spent 45 minutes scouring the Internet before posting the question. The information required to understand the Mac OS was so well hidden that your response is still the only glance I've had into it.
3) Zagg sold me a product intended to work with the iPad, which did NOT work the same way as the touch-screen on the iPad, and which required unobtainalble information in order to use. That's irresponsible.
Seriously, how hard would it be to post a nice instruction sheet like the one you provided, and include the url in the printed set-up card? 🙂

Apple Manuals are provided online instead of in the box. The one for the iPad, 150 pages or so, is here:

Most keyboard makers would probably never think to provide the kind of instructions you want, because how the keyboard behaves depends on the OS settings. But I agree the Zagg has such a limited purpose that it would make sense to them to tell buyers how to do what is needed in iOS. Let them know.
