auto-correct numbers into dates
Is there anyway to stop numbers from changing pairs of number that look like dates into dates? Sometimes when I enter 06-07 I just want 06-07.

Define the format of the cells as text.

"Question answered several times" = answered several times in this forum and a search might find you the answer. Might be in the documentation too, I'm not going to look for it though.
Cells are formated by default as "automatic", which means it could be anything. In this case, you are entering data that Numbers interprets as a shorthand for a date so it changes it into a date. Format the cell(s) as text before entering the data. This is not just a Numbers thing, Excel does the same thing.
