How to use 1 time capsule between two macs
We have a mac and a mac book pro. How do we separate them on my time capsule so they dont share caledars, address books, etc?

if you make backups/sync data from both devices, don't be affraid. Time machine knows that there are two different computers...it's made for networks and so it's made as a backup volume for a hand of computers.

What I really want to do is to stop my sons iphone and mac from seeing my calendar, address book, etc.
I realize that I dont even have time capsule turned on on his mac so my issue is more about stopping his iphone and mac from syncing with mine.
How do I do that?????

Apple says that you HAVE TO PUBLISH your calendar. So I think that it isn't shared by default.

So I think that you son isn't able to sync your calendar, because you need 'account informations' to sync/connect an iPhone with a calendar.
And you SYNC your data and don't make backups on time capsule?
