how can I print sheet titles from Numbers?

Numbers prints whatever is visible on the sheet.

There's no way I know of to show the Sheet names on the sheet other than manually entering it into the Page Header (or Footer), into a Text box placed on the sheet, or into a cell on or more of the tables on the sheet. Or you could include the Sheet name as part of a Table name, and choose (in the Inspector) to show the table name.

On the other hand, it's great that Numbers isn't just like Excel 🙂

I just triple-click the Sheet name, Command--C, and then click once on the Sheet, away from any other content, and Paste. I get a text box with the Sheet Name that I can format and position as I like.

You have Office for Mac and the free clones to choose from. No sense in banging your head against the wall trying to use the wrong tool for your needs.

I don't find that difficult to believe. If you need the functions supported by Excel and not by Numbers, then Excel is the tool to use. OTOH, your finding of 'more flexible' translates, at least in part to 'more familiar.' All applications, Excel included, force you into certain paths.
