How do I delete the info on the phone so that if I sell it they won't see all my stuff. Also what is the purpose of a sim card?

Sim card contains data from the carrier to identify the phone number. Iphone stores nothing ont he SIM. Do not give the SIM car to whomever you sell the iphone. Keep the SIM.
The manual will tell you how to erase all content and settings.

Apple send me a new phone because it had the searching problem. I went to the sprint store to activate but they had to give me a new sim's card because mine wasn't working either. Since I got it activated, everything works fine just that when i'm trying to download a new app it gives me someone else's apple id. I checked my settings and my apple id is on there. Could it be the sim's card? Don't know what else to do.
It can't, unless I'm misunderstanding what it is you're trying to accomplish. The iPhone doesn't save anything to the SIM card and hence can't erase content on one.

No, it's almost certainly not a SIM issue since the SIM does not store your Apple ID.
