When will Aperture 3 have a raw file converter for Canon's new 5D model? Should I work with JPEGs in the mean while or is there another better solution?

I would shoot in raw+jpeg while you are waiting and use the Adobe dng converter,
see Adobe's Camera Raw Converter
Then, when the raw is supported by Aperture, reprocess your masters.

I just got the Mark III and raw is my mainstay. I'll try the CS6 and Lightroom while Apple gets around to supporting our camera.
