In Settings > General > Reset, when you tap on Erase All Content and Settings, can you stop it once it starts?
I'm hoping the answer is "no"; that it carries on and will only stop once it has erased EVERYTHING securely from the iPhone.

No, you can't stop it once initiated. However, on an iPhone 4S this should happen almost instantly, as all that is erased is the encryption key.
Oh right. I have an iPhone 4S. So with the encryption key erased, all of your data is completely unreadable? I ask because I'm having my iPhone 4S replaced at an Apple Store, and I'm not keen about handing over my old phone with all my personal data on it.
