How do I remove a tab on my iPad 2 and/or change ite label?
On my bookmark menu bar, I would like to remove and/or change it's label?

Do you mean in Safari?

On the top row of Safari tap on the icon that looks like an open book. Navigate to the where the folder or bookmark you want to change is shown and tap edit. You can change the name of a folder or delete it.
To change the name tap the bookmark or folder and you'll get to a dialog box where you can edit the bookmark or folder or move it to another location.
