how to upgrade

If you've got an iPhone 3G, iOS 4.2.1 is the end of the line. There are no further upgrades.

You can't. 4.2.1 is the last version that the iPhone 3G supports.

If your curious I'll go into further detail. Since the iPhone 3G's procceser is not capable of holding this advanced technology apple stopped at 4.2.1. If you really want it I suggest you buy a new phone if you are eligible for upgrade such as the 3GS, it is capable of ios 5 technology.

My iphone says it is 4.2.6(8E200). Can this be upgraded? Or is the same version as the 4.2.1?

If it comes back as a 3G it cannot be upgraded beyond where it is. If it is a 3GS, 4, 4S, or 5 it can be.

Tip: Connect the phone to your computer; Go to iTunes; click on the name of the iPhone, then the Summary tab on the right. You will see the serial number of the phone.

Yes, it is good, assuming the phone is not jailbroken. Install the latest version of iTunes on your computer if it isn't there already, connect the phone, and you should see an Update option on the iPhone's Summary screen in iTunes.
