You need to use the correct app, providing it has e-mail capabilities. So say if you type a document in Pages, you need to use Pages to send an e-mail with the attatched document. Mail does not have this function built in, because it is not structured like typical e-mail clients.

You'll have to open the document in whatever program you are using, and then email it from within the program.

If you store it in iBooks, where I store my PDF's, Open the PDF and you will see Library 3 lines in the middle to split the document up and an arrow. Tap the arrow and you can email or print.
