I'm reaquainting myself with Apple, after years as a PC user. I have an iMac, which I want to disable remote wipe on. As it's not a laptop, I don't need this feature. Thanks in advance to anyone that can help.

You cannot, that is part of iCloud.
You can if you have that computer setup to use iCloud, if so then on another computer sign into icloud.com with the same appleID and password you used on your iMac then go into find my iPhone section and you'll see that option.
Just go to System Preferences > iCloud > uncheck Find My Mac.
