Before you start altering all your mail settings, check how much memory or space you have left on your device. My iphone 4s had 228mb of memory left so i deleted a bunch of pics and vids i had. Then I tried sending my email again and it worked with out a hitch....

I do all that but the "Gmail SMTP Server" screen is all disabled (grayed out) except for the Server green on/off button at the top.

Yes, the process was very frustrating. You need to make sure your outgoing server is correct for the "mail domain" you are using AND make sure the port you are using is correct. If anyone has anymore questions, please post. I do not wish this headache on anyone, and the answers on this post were very frustrating. The most helpful, simply put, but still needed a bit more direction... was from @trevapaul!!!
