I am only allowed to add a yahoo account to messages why is this? Their are no other options for AOL, Jabber (Facebook) or anything other then Yahoo? OS 10.8.1 MT macbook pro

Sounds to me like your machine has parental controls set.
No parent controlls set up. It worked ever since upgraded from os 10.8 to 10.8.1
How do I erase the prefrence file(s) for messages app and then the prefrence for mail/contacts?
Maybe preferences are wonky...
Quit System Preferences
Go to your Finder "Go" menu hold the option key to choose "Library"
and delete these files/folders:
/Preferences/com.apple.system preferences .plist
/Preferences/By Host/com.apple.systempreferences.xxx.plist (all of them)
/Caches/com.apple.systempreferences
Then launch System Prefs... any better?

They're in your Preferences folder listed under their respective names as com.apple.(name).plist
But be careful the mail.plist contains all your mail settings.

What happens in another user? Create a new user and try System Preferences...
make it an admin.
nothing would happen still the same odd problem as before.
All I am able to do is set up Yahoo account but no jabber, google, aol?

Are you saying that you do not get these options ?
Do you use Parental Controls on your account (Mac User) ?
If you do I would guess you will find you also cannot enable the Bonjour Account in the Messages > Preferences
