How do I get OS X Server 7

I want to upgrade my XServe to OSX Server 7 from Server 10.6.8, but software update doesn't list it. This Xserve its on isn't compatible with Mountain Lion, but I would like it to have the latest software that it can. How can you get 10.7x?
