How do I set default JVM now Java Preferences has been removed?

The latest Java update removes the Java Preferences application, I have always found this useful for setting the default jvm, how do I do this without the preferences appp?

Aperture 3, Mac OS X (10.7.1)

Go to System Preferences and select Java preferences pane at the bottom
