Hello Mooglepink,
There isn't any way that I know about to add subtitles or captions using iDVD if you want the user to be able to turn them on and off. A workaround would be to add two versions of your video to the DVD, one with subtitles and one without.
Using Google to search, here's an option using iMovie that I wasn't aware of -- may be worth investigating:

The pro version of Apple's burning software (DVD Studio Pro) can create switchable subtitles, but the price and learning curve are a bit steeper than iDVD.

Hi
Only way to do it is - FAKE IT - by using two or more movies with each it's own textings.
Yes it's RAW
Yes it takes numer of texts + no text times of space on the DVD e.g a no text + Swedish text 50 min movie is about what a SL-DVD can hold by using iDVD.
For Short movies this is OK - no one will notice.
For Long movies other solutions must be used as
• DVD Studio Pro (discontinued from Apple)
• Roxio Toast™ (movie copy method must be used - but can squees in more onto a DVD - with less quality)
• Adobe Encore ????? - Any one know anything about this ???

Yes. Encore DVD is a full authoring software and that, of course, includes subtitles.
There's also another app that can supposedly handle subpictures. It's called MovieGate but I have never tested it.
