Depends on what you're going to do with it. I have a 16 gig and I have hundreds of documents, dozens of apps, few albums and a couple of movies and I have 1-2 gig or so free.
If you're a data hoarder or want to carry all your music or movies then you will want more space. If you're willing to manage your data, you can get by with a smaller one.
Just remember, once you buy it you got it. the memory is not expandable, so a good general rule of thumb is buy the most memory you can afford.
