How can I arrange icons in Launchpad

Hold down on any icon until things start to jiggle. Now you can drag icons around or across launchpad screens. Or, if you like organizing similar task apps, drag one icon over another to create an app folder. When you are done, press the escape key, and exit Launchpad.

There is no quick easy sort of LaunchPad icons. All you can do is manually move them around into the order (alphabetically) you want.
