I want iDVD so I'm considering putting iLife 08 (buying brand new disks) and putting it on my iMac (2011 version, I just got it this summer). If I do this, will everything still function as it should... and will iDVD work on my iMac?

Run software update after installation to ensure you have the latest version.
But you should buy iLife 9, not 8.

Also I have a update for iDVD which I tried to use, but it notified me by saying that I had to have iDVD 7.0.4 in order to update..... I never heard of any of this stuff before! Otherwise I would have just left it alone and saved myself $20. This is a pain. I'm beggining to hate Apple.
