You can't change and @me.com or @icloud.com address. You can, however, create an alias email address, which will receive incoming mail to your current iCloud inbox (see http://support.apple.com/kb/PH2622). If you want to create a new iCloud email addrss you have to create a new iCloud account.
My son entered his address so my info isn't being shared among my devices. How can I fix this?
Go to Settings>iCloud and delete the existing account. Then set up your existing account to sync your data to your other devices. (Deleting the account only deletes it from your device, not from iCloud. If another device is still using the account it will not be effected by this.)

There is not an option to delete the account within Settings (IOS 7 issue?). Other ideas?

Go to Settings>iCloud, scroll all the way to the bottom and you'll find "Delete Account".
Thanks. I thought I'd scrolled all the way down. It is asking for a password to turn off Find IPhone and it won't accept what was the password. Is there where I have to go through the logging in, changing my current Apple ID email to the old one, etc.?
Yes. Try going to https://appleid.apple.com, click Manage my Apple ID and sign in with your current iCloud ID. Click edit next to the primary email account, change it back to your old email address and save the change. Then edit the name of the account to change it back to your old email address. You can now use your current password to turn off Find My iPhone on your device, even though it prompts you for the password for your old account ID. Then save any photo stream photos that you wish to keep to your camera roll. Then go to Settings>iCloud, tap Delete Account and choose Delete from My iDevice when prompted (your iCloud data will still be in iCloud). Next, go back to https://appleid.apple.com and change your primary email address and iCloud ID name back to the way it was. Now you can go to Settings>iCloud and sign in with your current iCloud ID and password
When you say "Then edit the name of the account..." are you talking about where it asks for my first, middle and last names?
