I sync an iPad, iPhone and iPod Touch to the same iTunes account and same iTunes on my computer, and I haven't had any problems. Your computer's iTunes should remember your sync selections for each device that you connect to it.

Yes you can sync multiple devices to one iTunes account. iTunes will treat them as separate backups. All the devices should have the same Apple Account though.
