we have been trying to upload a podcast using Podcast Publisher, but do not know what to put for server any help would be very appreciated!

Do you have an OS X Server 10.6 system with the Podcast Producer server configured and running? If so, that's what you enter as your server. Here is the Apple Podcast Producer documentation for OS X Server 10.6.
