Only for those applications that require it. It is very difficult to quantify due to the number of variables. If your MBP is a model 5.1, it can use up to 8GB RAM.

Also I run Adobe cs5 and final cut if that makes any difference?

5.1 is the magic number. The correct RAM specifications for your MBP are: 204-pin PC3-8500 (1066 MHz) DDR3 SO-DIMM.

I recommend RAM from Crucial or OWC. Both have a proven track record for Mac RAM compatibility and have excellent customer support.

This may sound stupid but, should I do 4 and 4 in each slot or 8 in one? does it matter?

Yes, 4 GB in each slot and it does matter. Matched pairs are more efficient than mismatches.
