From the Mail menu, under Mail, click "Preferences", then click "Fonts & Colors" on top. All your defaults are there.

Thanks that appears to have worked this time. For some reason up til now it would not change the font even though I kept selecting the one I wanted. This time however I did save each change to favourites, do you think that could have helped.

I ahve the same problem.
When I try to change my default message font I click on the fonts and colors tab and my fonts are all listed. However, there is no way to "Apply" the new style I want. How do you do this?
I have tried closing the window. I ahve created new group with the new fonts size in it. Nothing seems to work. When I close the font window the same default font is there.

I have exactly the same problem with a new IMac Jeff. There is no (apparant) way to apply the new font style in Mail preferences.
I have a new iMac and I got it to change once and now it wont change and I am stuck on a font that I dont like! In 3 months this is still an issue? Is there no work around? Please help! I posted the question to the community 3 days ago and I have not had one response! HELP!
