emojis
I have added emojis as another keyboard, but how do you change it or add another emoji keyboard
I have others, but I am looking for the convenience of having it under my email options
is this possible ??

You can't add another emoji key board, at least not the iOS built in keyboard structure. Only those keyboards listed in the Settings app are avilable.
To swithc between any activated language key boards, tap the globe symbol to the left of the space key. It will will cycle through any keyboards you have added with each tap. One you are in the Emoji keybaird, swipe key screen to move between the paes of avilable icons, and tap catagory menu at the bottom to look at and use different catagories (BTW: one of the catagories is "Recently Used").
