Check Hosts file of computer and remove all the gs.apple.com entries. Reboot and retry restore.
Hosts appears to be empty, doesnt seem to have ever been updated
Are you sure it's error 11?
Here is a list of specific errors and troubleshooting information. I don't see 11 listed anywhere.

The only references turned up by google seem to have to do with jailbroken phones, which can not be discussed here.
yep 11, I am also getting a -1.
This is not a jailbroken phone, currently it is just broken as it is stuck in recovery mode.
Only advice i can find by googleing is to keep trying as it is an apple registration server issue.
Any thoughts?
Error -1 would indicate a hardware issue with the baseband. If your iPhone has never been hacked/jailbroken to unofficially unlock it then you are going to need to get it serviced.
Have been hitting the retry button in itunes for the recovery for the last hour and have finally managed to restore the firmware.
the phone is now doing a complete recovery from backup.
not a good apple experience, which is a shame as i love the device.
would be good to understand why this is happening as I am obviously not the only one hitting the issue
The error 11 reference is for those computers which were used for jailbreaking or Hacking and not for iPhones.
Error -1, as already stated, indicates hardware malfunction with regard to modem firmware or more commonly known as baseband part.
Suggest use another computer.
