My wife set up my iPad with some apps for a Christmas present. After then we changed them to my AppleID but on recent app updates the ipad is asking for her AppleID again. Do i need to delete all the apps and download them again or can I change the AppleID back to mine?

Go to Settings>iTunes & App Stores> click on Apple ID displayed and choose Sign Out.

Apple ID and iTunes account are two different things. You can use different AppleID's and should for things like iCloud backup and such. But unless you want to pay twice for apps, I suggest you use one iTunes account.
It seems you made purchases under two different iTunes accounts which is why you are being asked to authenticate for that account.
