I have server on a mac mini and server app on my MBP. When I open the server app on my MBP I try to login to the server using the short name, full name, user name, and it just won't let me log in... Shakes the window saying it's incorrect when it clearly isn't...

You can click on "other mac"
enter:
IP address of the server and your user name and password.
Its a pain but it works
Assuming it's not the problem with Server.app trying to log in locally, check the DNS setup on the client and on the server, and also check the logs on the server.
On the server itself, launch the Server app, and in the left-hand menu, top-most item, "Server":
click on your server name listed there.
Over on the right-hand side, click on the Settings tab, and ensure "Allow remote administration using Server" is enabled (checked on).
