Apple will replace your phone with a new OR refurbished one. The best thing to assume is refurbished.
can I ask them for a new one though or is it their choice to make?
It's not really a matter of choice for them. All replacements come from service stock. Service stock is specially packaged and may be new or rebuilt. The staff at the genius bar shouldn't be able to tell the difference.

And neither will you all consumer viewable parts and battery are new the internals may be recycled
and i prefer refurbished iPhones - you cant tell them apart from a new phone and unlimke new phones which just come off the assembly line and may have gone through random spot checks - a refurbished phone has been inspected and examined by a person to make sure its ok
