I don't think you can. Your best bet is to access gmail via the web or if they have an app.
You can't. You can't log out of your email at all in the mail app. Like Skydiver suggested, you might want to delete the gmail account from the iPad settings and just use a web browser to access your email.
There are a couple of gmail apps that might better suit your needs.
You can now do this - go to https://www.icloud.com/#settings and click "Sign Out Of All Browsers" at the bottom.
