Hey,
As a massive excel user at work I assumed this would be aligned with the system settings as well - turns out not so much.
I've just created a custom date format, whereby I make the date appear like it *should* (yes, read into that what you will incorrect Americans).
All you do is;
Done. Dates will appear like they should.
Awesome, this resolves the way the dates look; but I still have to type them in US format! I *really* don't want to have to type 7/31 to get a proper date, this doesn't make any sense to me.
My system preferences are set to custom German... (I prefer the UK format with / than the German format with .)

Then go to File > Advanced > Language & Region ... and pick a Region that suits your needs.
This is an old thread, and Numbers has since moved on.

I posted a workaround in another thread: https://discussions.apple.com/thread/5546012?answerId=24016942022#24016942022
What is your locale setting on the machine? I think this is what is used as the default for setting date format.

It works for me as it displays the uk date. do you have a better suggestion?????
If you prefer something to look right but be wrong more power to you.
Try subtracting 3 days from it.
If you had read this thread you would know my answer already.
Don't use Numbers, use something else, anything else.
