First of all, make sure you have the latest driver for the iP1000. If you have to, download the Canon iP1000 driver v4.1.5 from a Canon web site, run the installer then restart your Mac.

Then, delete the current printer from the Printer List (or the Print & Fax section of System Preferences) and add the iP1000 again. If the installation of the v4.1.5 driver has worked correctly, when you choose the USB connected iP1000, the Print Using menu should show Canon IJ Network.

When you run the 415.pkg it will copy all the necessary files, including the plugins to ./Library/Printers/Canon/BJ. Then when you add the printer via Printer Browser > Default Browser there should be no need to select the model via Print Using. When you select iP1000 the Print Using menu should automatically set to Canon IJ Network.

Sometimes the process above doesn't work after an OS X update. In this scenario, the only easy option is to open the Printer Setup Utility and execute the 'Reset Printing System' option. This will clean out the added Canon files so once it is complete you will need to run the Canon installer again.

Note that the 'Reset' option will remove all printers from the printer list. But it sounds like the iP1000 is your only printer so it shouldn't be an issue...

Your description sounds like you are connecting to another Mac that is sharing the iP1000, rather than connecting locally via USB. In the sharing scenario you cannot change/set the Print Using menu. But I have never seen a local installation stop you from changing the Print Using menu. This behaviour is like you don't have rights to change the setting. Do you have more than one account on this Mac?

If you were able to change which printer you are connected to but for some reason the Printer Browser defaults to the wrong printer, then I would say you have a comms issue. To ensure you can communicate with the printer correctly, there is a Canon utility you can use to test your setup. Go to ./Library/Printers/Canon/BJPrinter and open the Canon IJ Printer Utility. The Printer List window that appears should show a connection type of USB and the iP1000 as the connected printer. If the iP1000 is listed you can select it and click on Maintenance. This will ensure you have comms to the printer.
