Can I change what seems to be the default save place (iCloud) for Preview to someplace on my computer instead. I don't want to automatically save to iCloud.

You're welcome - sorry there isn't an easy solution!
I don't use iCloud because I do not trust my private information to any online server since any server can be hacked into. So I don't even store my contacts there and do not really appreciate the fact that iCloud automatically pushed them from my address book to iCloud even though I had indicated that it should not when I set up this iMac - deleted them all.
