I set up my new iPhone without backing up my old iPhone (last backed up 2012) so now my new iPhone hasn't got my most up to date info, photos, contacts etc. Can I re set my new iPhone, and start again?

Yes. If there is nothing on the new phone you want to keep, just restore your last backup from the old phone onto the new one.
If you use iCloud backups, you will need to go into settings> general> reset> erase all content and settings on the new phone so you can get back to the restore from iCould backup.
