App names most likely have the same limit as regular HFS file names: 255 characters. but as Z_B noted, a 255 character app name would cause a number of headaches. Standard icons will take something like 10 or 12 characters before they wrap or truncate text; best to keep it under 1 wrap on iOS, or 2 wraps on OS X.
