As one of the first people who voiced their opinion on this matter, I have come back to report the progress:
Since we have Apple Care Plus, I was able to get a phone that has iOS6 and not 7. It was the best thing to happen since I <3 my iPhone and didn't want to change. I was affected by the motion zoom to the point that my phone was not usable. So, I thank Apple for giving me the option to "get my phone back".
I have seen the videos on YouTube that show the change from Animation to Fade. But, that does not solve everything.
Being that I am a social creature, as most humans, I use texting A LOT. The texts still feature bouncing bubbles with white on green texts for the sent messages. The bouncing is not necessary, and is dizzyfying. Being that texts are a main part of my usage, I will not go to 7 until it is able to function without the bells and whistles.
The white instead of black background, when folders are open, is quite off putting whenst trying to focus on the app that was opened. Please do not tell me to put everything in one folder; I have heard and tried it all before going to get another dang phone.
Also, my other main beef, is the camera. It puts the button on the screen instead of aside from it; you are using a button and it covers up part of the picture instead of being separate.
To the haters, YES I did contact Apple about my concerns, and YES I did try to use the product (phone), so please do not tell me I am complaining here for no reason. I wanted to turn off the animations, but the more I use(d) the phone, the more problems I encountered.
To those whom have used the new setting: YAY! I am glad Apple has made a fix, but given my experience, I cannot just upgrade yet when it took so much to get iOS6 back V_V

There are still a few kinks to work out, and I am excited to see the progress as it developes. At this time though, I am more comfortable not upgrading since there are still more issues to be worked out.
