What I've found, after reading three or four websites, is:
a) the "show all songs" has no effect other than hiding songs that are not on your device, but rather in the cloud -- so by doing this it may eliminate some confusion as you can't delete a song that's only in the cloud (i.e., not downloaded on your device); and
b) it seems to me you can only delete songs from the Songs, Album, or Artist 'tab' (click the 'Songs' or 'Album' or or 'Artist' icon at the bottom of the Music app) -- I can't seem to delete a song in a playlist, which is frustrating as I work out of playlists 90% of the time 😟 .
And yes, swiping right-to-left gets the Delete icon to show. This is the page that helped me the most:

Bought a new phone....
I to have the problem of deleting albums from my iphone 5s. I have switched of the 'itunes match' and also switched off the show all music and movies. And still unable to delete albums. I have recently tried syncing my iphone 5s with my laptop and still unable to tick and untick albums i do not want on my phone anymore.
I think I found solution. (it worked for me atleast).
Go to:
Itunes App.
Sign in:
Itunes Store
Go to:
Music Purchases
Find album/song and click X to hide.
update and sync device.
done!

Select songs under iPhone in iTunes, then go on the top bar to Edit>Delete
To reiterate: so far under ios 7 you can either delete song by song or the entire library.
My experience was to sign out of icloud and iTunes Match, determine all music from the usage section of General settings, sign back in and download the music I wanted again.
I mean delete from the usage setting page.
what i read in the help files and just did myself, highlight the song and then press delete on your computer....select multiple songs using shift key and then press delete
If you want to delete All you music very simply then you can go to general > usage > Music > Edit it the top right hand corner > then choose the red - sign it will DELETE IT ALL

Thanks to everybody's suggestions. The solution is to turn on " show all" music downloaded, then download the music from the cloud, then turn off "show all" music and delete songs as necessary. I believe my problem had to do with cached songs combined with home sharing which caused music to show up on my son's iPod (shared account), but they weren't actually downloaded. Hope this helps.

Dereklipkin, thank you sooo much!!! This totally worked and I am finally rid of all of those unwanted songs!!! I did just like you said and loged out of icloud and itunes on both my computer and iphone and that was the trick!! Plus followed your steps. Thank you so much for sharing. :] It's funny how we forget to do the most basic things like resetting our routers, computers, and iPhones. lol
