Italics in a Text Message

I was in the Apple store today at the Genius Bar and they were showing a video that I caught a glimpse of saying that it is now possible to italicize, underline and bold words. The manual seems to validate that as well. I'm a little confused because I can't seem to figure it out. Any thoughts? Thanks for your help.
