I have an iPhone 4S & am wishing to change my SIM card to a different operator under a new mobile number. Although I have my phone backed up onto my computer, will I lose all my photos, apps, contacts etc when changing SIM cards?

nope you won't. but if you have some contacts stored in the sim card,you can go to settings> mail, contacts, calenders and Import sim contacts and just to be sure you can back up phone and change to the new sim card

You don't. That is not an option on an iPhone.
