Since I upgraded to Mavericks, Mail.app started persistently auto-correcting three consecutive periods (dots) into the "ellipses" (single) character. This is not one of my System Preferences/Keyboard/Text/ replacement rules. Is there another place where such auto-correction rules are set/prevented?

It is indeed highly unintuitive and cryptic—and that's an understatement! In fact, neither does the System Preferences/Keyboard/Text joint (why?) option "Use smart quotes and dashes" nor do the separated ""Smart Dashes" and "Smart Quotes" give any indication that these commands also include the "..." → "…" substitution! (BTW, the difference is minor in some fonts, but very noticeable in others.)
I was particularly interested in nixing thesubstitution in Mail.app, so Tony T1's answer is a tad more on point; both are however valuable! Thanks!!
Edit->Substitutions-> and uncheck Smart Dashes.

However unintuitive it may be, you need to uncheck the box 'Use smart quotes and dashes' to the right of the substtutions list.
EDIT: @Tony T1 - The Sys Prefs option turns it off system-wide...
Thanks for this guys. I've been searching for an hour on how to stop this incessant correction.
Ellipses are neither dashes nor quotes. That Apple would (a) offer not even a single hint about lumping them altogether; and (b) not provide an way to turn off ellipses independent of dashes and quotes is utterly stupid.
This helped me too... However, it looks like it is application specific.... Safari was greyed out in the pull down but in Messages it worked like a charm, which is where I was having the problem anyway! Wonderful fix! Thank you!
How did you guys get this off completely? I have the System Preferences deactivated (unchecked) and "fixed" Mail.app, but in other (particularly, non-Apple) programs with text, the substitution *still* happens. How can this nuisance be turned off "for good"?
You might want to consider starting a new discussion. Since this one is marked solved and is a couple of years old, less people are likely to look at it. A new post would be much more visible. You can link to this one.
Try turning it off in each application.
