How do you change iMessage for a single contact?
When trying to message someone that was an iPhone user but changed to a HTC phone, for some crazy reason, iMessage is still the default how can the on contact be changed?

Not a way you can change it they need to call apple to have it fixed
I figured out how, turn off iMessage in settings then power off the iPhone by holding the power button and the button on the front until the apple appears. When it reboots open the contact using the "other" phone, add new number & re-type the number then delete the number already in the phone. Power off again. Open settings and turn on iMessage again. This breaks the iPhone link and allows the number to be used as a text number, at least it did for me.
What worked for me, was when I sent the message (as an imessage) I held the text, and the option of sending as a text came up. Send a few messages like this, changing them all to "send as text" and after two or three the phone automatically changes it to simple text, and it hasn't changed back. No need to mess with any settings either
After I send 2 messages like TheyCallMeJerry the phone automatically manage the messages as simple text. This method solve my problem.
To disable iMessage for a former iMessage contact, two things need to happen in succession:
1) the iPhone user must RECEIVE an SMS message from that contact, and
2) the iPhone user must SEND an SMS message to that contact
(not necessarily in that order)
It should also be noted that if the contact ever sends an iMessage again, your iPhone will revert back to using iMessage until the above two steps are repeated.
