How can I update my Max OSX 10.5.8 to at least 10.6 or higher when my computer says my software is "up to date"? With the 10.5.8 version I cant use the new version of itunes which means I can't sync my ipad 😟

You cannot, unless you previously download Yosemite 10.10 (then it would be in your Applications -> App Store -> Purchases tab), otherwise Yosemite is no longer available for new downloads.
You may be able to upgrade directly to Sierra 10.12.

If your Mac does not support Sierra, then you should be able to install El Capitan
