I am going on a long trip, a flight of 14 hours, and would like to know if I can use apps while in flight. Do they use date while using? I realize that data is used when loading the app, but wonder about using it? Some examples of what I want to use...scrabble, and reading a book on the Kindle app... I am sorry in advance if this is a rank novice question...

You should be fine. If you want to do a real world test, go into your settings and put your iPad in airplane mode, that simulates turn off the antenna.
Chances are your kindle app will be fine, but if your scrabble plays from the internet, that won't. What you'll be able to access is anything self-contained on your device.
It depends on the app. Some require data, some do not. Reading books on the iPad or iPhone does not require data if the book is loaded on the device. Same with video or music.
