The old version did it for you, but you can manually do it by.
1. Add a new row (or column) next to the one containing the cell you want to split.
2. Merge all the cells in the rows or columns, except for the one you want to split.
It's a pain to no longer have this feature.
Pages 09 had the split row/split column option, and with one cell selected, it would only 'split' that cell. But I believe it actually added a whole new row or column and the non-selected cells were automatically merged.
To obtain split cells you have to go about it in a round about way....
Do this by creating the columns then merging the headers into one
You first need create the colunms to merge...
Then select the coloums to be mearged by pressing shift and clicking mouse/track pad.
Once selected now your ready to merge them they will have a thin box around them with circle bullets in coners of the colums selected.
In your menu bar go to "FORMAT" select "TABLE" then select "MERGE" You should now see a header will split columns.
In the old pages you could right click (or go through the table format menu) and split a selected cell into two, either by row or column
The new pages doesn't appear to have this option
I have found multiple other posts complaining of the same issue
It's a very useful feature to have!
I was just googling how to do this to, then discovered on my own that if I right-click on the cell that I have previously merged, I can unmerge cells. Admittedly this only works if you have previously merged the cells, but at least it helps in some cases.
No version of Pages has been able to split a table cell, only split between rows.

You have many other options. Why use Pages if you don't like it?
